Masala Dosa:


Ingredients:

Dosa prepation:

Rice 3 cup

White lentil ( mash daal/ urad daal) 1 cup

Water as required

Baking soda ½ tsp

Salt to taste

Ghee as required

Chana Daal Chutney:

Chana daal 1 cup

Garlic cloves 6

Button red chillies 10

Curry leave 7-8 

Green chillies 4

Mustard seeds ½ tsp

Salt to taste

Oil as required


Aalu bhujiya:

Potato boiled ½ kg

Onion sliced 2

Tomato 1

Turmeric powder ½ tsp

Button red chillies 6-7

Cumin seeds ½ tsp

Curry leaves 8

Mustard seeds ½ tsp

Crushed red chillie 1 tbs

Green chillie 6

Fresh coriander 2 tbs

Salt to taste

Oil

Coconut chutney:

Coconut 1 cup

Ginger 1 small peice

Green chillies 4-5

Curry leaves 6

Chickpeas roasted 4 tbs

Salt to taste

Water as required

Oil 2 tbs

Mustard seeds ½ tsp

Cumin seeds ½ tsp


Method:

For chana daal chutney:

In a griddle dry roast the chana daal when aroma comes take off flame.

In a bowl add chana daal and soak in water for 2 hours. In a grinder add chana daal, garlic cloves, salt, green chillies and grind it well.

FOR TADKA:

In a frying pan heat oil, add button red chillies,curry leaves and mustard seed when the aroma come add tadka on a prepared chutney and set aside.

For coconut chutney:

In a grinder add coconut, chickpeas, ginger, green chillies, salt and grind it well  and set aside

In another frying pan heat oil add curry leaves, mustard seeds, cumin seeds when aroma comes add tadka on prepared chutney.

For Aalu bhujiya:

In a frying pan heat oil add curry leaves, button red chillies,mustard seeds,saute for 5 seconds,add onion saute for 5 mintues then add tomatoes and cook for 10 minutes and mix well.

Now add turmeri powder, cumin seeds,salt , green chillies, mashed potatoes and mix well cook for 5minutes then add fresh coriander then take off flame and set aside.

For Dosa

Soak rice, white lentil for 8 hours, then strain out from strainer.

In a grinder add rice, white lentil, water and grind to make a smooth paste and mix well

In a bowl add this mixture and cover the lid and let it ferment for over night (approx 10-12 hour)

When the mixture is fermented add salt , baking soda half cup water and mix well.

Heat the griddle and lightly brush griddle with oil, pour dosa batter in a circle and spread evenly in a circular motion in a medium flame

When the dosa color is change add ghee around the dosa and cook when the dosa turn light golden turn of the flame.

Masala Dosa is ready. Serve with aalu bhujiya and chana daal chutney.
