 Egg Curry




Ingredients

Eggs (boiled) 6
Onion sliced 4
Tomato sliced 3
Curry leaves 6-7
Mustard seeds ½ teaspoon
Ginger paste 1 teaspoon
Garlic paste 1 teaspoon
Red chillie powder 1 tablespoon
Cumin 1 teaspoon
Turmeric powder 1 teaspoon
Coriander powder 1 teaspoon
Salt as required
Green chillies 7-8
Fresh coriander
Garam masala powder 1 teaspoon
Water 2 cups
Yogurt 4 tablespoon
Cooking as required

Method:

-In a pan heat oil, add eggs and fry until light golden color and set aside.
-In a blender, add onion and tomatoes and blend it well to make a paste and set aside.
-In another pan heat oil, add curry leaves mustard seeds, cook for 2 minutes then add onion and tomato paste now mix well.
-Add ginger garlic paste, turmeric powder, cumin, coriander powder,red chillie powder,crushed red chillie,salt,and mix well cover the lid and cook for 10 minutes.
-Now add 2 cups water and bring it to boil then add fried eggs.
-Add green chillies, fresh coriander and garam masala powder.
-Egg curry is ready to serve.
