Chicken White Biryani:
INGREDIENTS:
Pyaz (onion) fried 1 cup
pyaz 2 medium sliced
Hari mirch( green chillies) 6 7
Darchini (Cinnamon stick) 1
Sabut lal mirch (Button red chillies) 5-6
Dahi (Yogurt) whisked ¼ Cup
Namak (Salt) 2 tsp or to taste
Dhania powder (Coriander powder) 1 & ½ tbs
Garam masala powder 1 tsp
Kali mirch powder (Black pepper powder)1 & ½ tsp
Darchini (Cinnamon stick) 1
Sabut lal mirch (Button red chillies) 5-6
Dahi (Yogurt) whisked ¼ Cup
Namak (Salt) 2 tsp or to taste
Dhania powder (Coriander powder) 1 & ½ tbs
Garam masala powder 1 tsp
Kali mirch powder (Black pepper powder) 1 & ½ tsp
Zeera powder (Cumin powder) 1 tbs
Lemon juice 2 tbs
Dahi (Yogurt) whisked ¾ Cup
Kewra water 1 tbspn
Lemon juice 2 tbspn
Adrak (Ginger) julienne 1.5 inch piece
Podina (Mint leaves) chopped ¾ Cup
Hara dhania (Fresh coriander) chopped ½ Cup
Aloo bukhara (Dried plums) 8-10
Kary patta (Curry leaves) 12-15
Hari elaichi (Green cardamom) 5-6
Darchini (Cinnamon stick) 1
badiyan ka phool (Star anise) 6-7 blades
Jaifil (Nutmeg) ¼ piece
Javitri (Mace) 2 blades
Water as required
Namak (Salt) 1 tbs or to taste
Sirka (Vinegar) 2 tbs
Chawal (Rice) sella 700g (soaked for 30 minutes)
Cooking oil 3-4 tbs
Chicken mix boti 800g
Lehsan paste (Garlic paste 2 & ½ tbs
hari mirch(Green chilli) paste 3 tblsp
Sabut kali mirch (Black peppercorns) ½ tsp
Laung (Cloves) 4-5
Badiyan ka phool (Star anise) 1
Badi elaichi (Black cardamom) 1
Hari elaichi (Green cardamom) 2-3
Tez patta (Bay leaves) 2
Darchini (Cinnamon stick) 1
Sabut lal mirch (Button red chillies) 5-6
Dahi (Yogurt) whisked ¼ Cup
Namak (Salt) 2 tsp or to taste
Dhania powder (Coriander powder) 1 & ½ tbs
Garam masala powder 1 tsp
Zeera powder (Cumin powder) 1 tbs
Lemon juice 2 tbs
Dahi (Yogurt) whisked ¾ Cup
Kewra water 1 tbs
Ghee 2 tblspn
Method:
In a bowl,add onion,fried onion,green chillies,ginger,mint leaves,fresh coriander,dried plums and curry leaves,mix well and put aside for later use.
In a mixer,add green cardamom,cinnamon,star anise,nutmeg,cloves and mace & grind finely & put aside.
In another pot boil water
Add salt,vinegar in rice,mix well & boil then strain & put aside.
In a pot,add oil,chicken and mix well until it changes color.
Add garlic paste,mix well & cook for a minute.
Add green chilli paste,mix well & cook for a minute.
Add black peppercorns,cloves,star anise,black cardamom,green cardamom,bay leaves,cinnamon stick, button red chillies & mix well then add yogurt and salt,mix well & cook on medium flame for 2-3 minutes.
Then Add coriander powder,garam masala powder,black ppepper powder,cumin powder & mix well for a minute.Add lemon juice and mix well Add yogurt,kewra water,mix well & cook on low flame for 5 minutes
Now add and spread prepared mixture,ground spices,boiled rice and ghee,cover & steam cook on low flame for 20-25 minutes.sprinkle fried onion and its ready to serve...
